The Alarcon Coronel family runs the La Palestina farm, located at 1800-1900 meters above sea level in the mountain region of Jaen province, Peru. Here, they primarily cultivate Red Bourbon and Caturra varieties, but in recent years, they have also begun to experiment with other coffee varieties. These include the Geisha variety (with which we recently won the Nordics Best Roaster 2026 competition) and the local hybrid variety Marshell, from which this lot is sourced.
The entire farm is situated in what is called a semi-forest, meaning that all coffee trees grow partially wild in a forest filled with other trees and shrubs, teeming with birdlife and abundant natural shade. The shade in these forest areas contributes to an extended maturation period for the coffee cherries, which gives coffee from this region an extra sweet and fruity character compared to coffee from other areas in Peru. The trees also receive natural nutrients from their surroundings, which means, for example, that the Alarcon family does not need to use artificial fertilizers.
This lot is wet-processed, but with a "twist." The coffee cherries are hand-picked, carefully sorted before undergoing a "pre-fermentation." Subsequently, the coffee is depulped, meaning the pulp is removed from the bean, and the coffee undergoes classic fermentation.
After the coffee has been washed, it is laid out to dry on raised beds, with the initial drying period taking place in the shade.
